Stromboli
Preheat the over to 450˚
Purchase 1 lb. of pre-made pizza dough. I get it at the deli section of the grocery store. It usually comes in 1 lb. bags.
If you don’t have a homemade marinara sauce, purchase a chunky one with onions, garlic, tomatoes and basil.
NOW stretch, NOT roll, the dough to about a 9″ X 16″ rectangle.
Optional: rub the dough with olive oil and sprinkle lightly with salt and pepper.
Sprinkle with 2 teaspoons +- crushed red pepper flakes and a little extra Basil and Oregano.
NOW you’ll add the following in layers leaving 1/2 inch all around the edge of the dough plain.
Spread the marinara enough to cover the dough.
Spread 1/2 lb. of thinly sliced ham or prosciutto.
Spread a 10 oz. package of frozen spinach that has been thawed and totally drained, OR spread fresh spinach, which is best.
Spread 1/4 lb. thinly sliced pepperoni.
Spread some roasted red peppers and mushrooms.
Spread 1/2 cup of all the following grated cheeses or other grated cheeses you prefer:
- Parmesan
- Provolone or Mozzarella
- White Cheddar
Then top with another thin layer of ham and pepperoni.
ROLL: start with the longest side. Pinch all seams and sides.
CUT: two inch long slits on a slant across the top 2 inches apart.
PLACE: place seam side down on baking sheet covered with cornmeal or parchment paper.
BRUSH: top with beaten egg to help it brown nicely.
BAKE for 20 minutes. Makes 7-8 pieces.
SERVE with a good salad.
