Cowboy Caviar


A young man brought this to a pot luck dinner at our Potter’s Gathering in Ripley, WV. I want to thank him for sharing this recipe. Add a little delicious bread and it makes an easy and most enjoyable meal in itself.

You can make this a couple of days ahead of time if you must. Just DO NOT MIX the dressing with the veggies until the night before, if possible. Exacts amounts are not a must. Add other ingredients too if you’d like. I usually do. I added the corn and cilantro to this one.

15 ounce can of black eyed peas well rinsed. I like using frozen ones instead but it really doesn’t matter.
1/2 red pepper (sweet) diced
1/2 yellow or orange pepper diced
1 cup frozen corn NOT cooked but only rinsed under warm water
1 1/2 jalapeno pepper finely diced. You might want to dice just one first to test your tolerance. We like spicy.
4 spring onions sliced using green ends too, plus or minus.
DRESSING:
1 T minced garlic
2 T quality olive oil
2 T apple cider vinegar OR 1 T each of cider vinegar and balsamic vinegar. I like balsamic.
1 t black pepper (to taste)
dash of kosher salt (to taste)
Big Fat Handful of fresh cilantro.

Delicious.
