Gazpacho

Summer is the perfect time of year to make this. So refreshing and yummie. Use all fresh ingredients.

Just combine the following in either a large bowl or pan. It is even better after a day. You can adjust the spices to your own taste as well as adjust the consistency to your liking by adding or not more V8 Juice. Make sure you finely chop all the veggies.

6-8 ripe tomatoes finely chopped – I do not take the seeds out but you can if you wish

1 Squash

1 zucchini

2 carrots

1 cucumber peeled but not seeded

1 red bell pepper

1 yellow bell pepper (skip if too expensive)

2 stalks of celery

1 sweet onion

1 Tbsp Fresh dill chopped

3 cloves of garlic either pressed or finely diced

3 teasp of sugar

2 teasp salt + or -

1 teasp freshly ground pepper

1 qt. of V8 Juice + or -

1 teasp Worcestershire Sauce

3 Tbsp Olive Oil

¼ cup Sherry Vinegar

½ bunch of chopped fresh Cilantro (I love Cilantro)

1 teasp of chopped fresh Oregano

¼ cups of chopped fresh Parsley

2 cups Vegetable Broth

1 chopped Jalapeno Pepper (Don’t hold with fingers. Use a towel to hold it down so the hot won’t rub off on your fingers)

3 limes – squeeze out juice

Hot sauce if needed.

Mix well and then serve with torn pieces of French bread on top of the soup or not. Your choice. Good both ways.
