Gazpacho
Gazpacho (a cold fresh vegetable soup)
This is the season for this yummie soup. Give it a try. Not only is it easy, it is healthy and refreshing. And don’t worry about exact amounts. I just throw in what I have and always add more than I have written below but his is a starting point.
Dice: make sure you dice them into small chunks
6 Tomatoes (peeled or not – I don’t peel)
2 medium Green Peppers or red or yellow or a combination
1 Bunch of Green Spring Onions – all of it
1 Red Onion
2 large Cucumbers
1 Zuchini
1 Squash
1/2 bunch of Cilantro, or more – I like lots!
1 Jalapeno Pepper PEPPER very finely diced – or not, depending on your taste – might want to wait until the end and decide little by little if you want to add it.
In a separate bowl mix; after mixing, add it to the veggies:
6 crushed Garlic Cloves
3/4 cup of Olive Oil
1 1/2 tablespoons of Salt (may want to add more later)
8 tablespoons of Red Wine vinegar
1 teaspoon of White Pepper
1/2 teaspoon of Paprika
Several dashes of Tobasco
Several dashes of Worcestershire Sauce
ADD:
1 1/2 quarts of Tomato Juice or V/8 Juice – I use my homemade V8 juice
1 cup Water
Juice from 2-3 fresh Limes
YUM! Some folks like to add crouton sized pieces of some sort of heavy country bread.
