Seven Layer Salad


This salad and some good wholesome bread, make a great meal.

Several things you should know before assembling this salad:

  1. Clean everything before hand so it can dry thoroughly.
  2. You can add just about anything you want including meat such as chicken, ham, or 1/2 inch hunks of cheeses, mushrooms, avocados…
  3. I like to add tomatoes when in season but remember that they are moist and will limit the time you’ll be able to use the salad as a leftover; tomatoes make it a little too moist after a day or so but I love tomatoes.
  4. Use Miracle Whip, it works better in this than mayonnaise.
  5. Layer the amounts according to the number of folks you are feeding. Let the amount of lettuce determine it.
  6. Cook eggs ahead of time.
  7. Shred cheese ahead of time.
  8. Cook a bag of frozen peas ahead of time to cool.

This is the basic recipe:

Layer a variety of lettuce at the bottom of a large bowl (thoroughly dried).

Then sliced celery, green peppers, spring or sweet Vidalia onions, tomatoes, carrots, broccoli…

Place cooked peas in a separate bowl.

Mix peas with Miracle Whip gently and add a few tablespoons of sugar (depending on amount you’re making) to add a little sweetness. Be generous with the Miracle Whip and peas. Spread this over the salad.

Cover this with lots of shredded cheese (cheddar is best).

Add chopped eggs on top of that.

Top the salad with fresh bacon bits if you’d like.

Almost everyone likes this salad!!
