Orange-Date Pumpkin Muffins


(Carol and Mike, this is for you)

Preheat oven to 400 degrees
Spray muffin tins with nonstick spray
Whisk:

  • 1 1/2 cups of all -purpose white flour
  • 1/2 cup whole-wheat flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. cinnamon

Set this aside.

Place 1 large orange (washed well, seeded and cut into 8 sections) in a food processor and puree
Add to the orange:

  • 2 large eggs
  • 2/3 cup pumpkin puree
  • 1/2 cup packed brown sugar
  • 1/4 cup honey or corn syrup
  • 3 tbs. olive oil or canola oil

Process until mixed.

Make a well in the f’lour mixture and add the orange mixture

Add:

  • 3/4 cup chopped dates
  • 1/2 cup chopped walnuts or pecans (as many as you like)

Mix well and then spoon mixture into muffin cups.

Bake for 18 to 20 minutes (done when the tops spring back)

Options:1. Instead of adding nuts to the mixture, sprinkle them on top of the uncooked muffin mixture. 2. To make the small bite size muffins, bake for 10 to 11 minutes.
