Oatmeal Cookies


Preheat oven to 350 degrees. Get cookie sheets ready BUT DO NOT GREASE THEM! Soften butter
Then beat together:

  • 1/2 cup granulated sugar
  • 1 1/4 cups of light brown sugar
  • 2 sticks of very soft real butter ( I use to use butter flavored Crisco but it is so awfully bad for one’s system that I have gone back to butter. But Crisco makes wonderful cookies.)

Secret: Beat these ingredients for a long time until very, very fluffy and creamy.

Then add:

  • 2 eggs (3 if they are small)
  • 2 tsp. of vanilla (I have also used maple extract when out of vanilla)

Continue beating until well mixed.

While beating mix these together in a separate bowl:

  • 1 1/2 cups all-purpose flour (I like King Arthur’s)
  • 1 tsp. baking soda
  • 1 tsp. cinnamon +++
  • 1/2 tsp. nutmeg
  • 1/2 tsp. salt

Add the dry mixture to the cream mixture and mix well.

Add:

  • 3 cups of uncooked old fashioned Quaker Oats and mix

Add: (You’ll probably have to fold these in by hand)

  • 1 BIG CUP of raisins +++ ( I like raisins)
  • 2 cups of walnut pieces
  • Using a tablespoon put a hunk (1 tbs. plus or minus) on the cookie sheet.
    Bake 10 minutes or until golden brown. Depending on the oven, you may need to bake for 12 minutes.
    Cook and remove onto wax paper, pour milk and splurge.
    Makes about 3 dozen.
