Lemon Lime Bars


From Whole Foods Market Cookbook

Preheat the oven to 350.
Sift:

  • 2 cups unbleached all purpose flour (I like the King Arthur brand)
  • 1/2 cup powdered sugar
  • cut into the flour:
  • 2 sticks of real butter (not softened) until it looks like coarse cornmeal
  • press: into a 13″ x 9″ x 2″ pan (do not butter pan)
  • bake: for about 20″ or until lightly browned. Cool
  • beat together until frothy (1-2 minutes or so):
  • 4 large beaten eggs
  • 2 cups granulated sugar
  • 3 tbs. lemon juice – fresh
  • 3 tbs. lime juice – fresh
  • 1 tsp. grated lemon zest
  • 1 tsp. grated lime zest

Set aside.

Mix 1/4 cup flour and 1 tsp. baking powder together and then add it to the egg mixture.
Pour this over the baked crust. Bake for 20-25 minutes until set. Cool. Sift powdered sugar over top and serve.
