Lemon Lime Bars
From Whole Foods Market Cookbook
Preheat the oven to 350.
Sift:
- 2 cups unbleached all purpose flour (I like the King Arthur brand)
- 1/2 cup powdered sugar
- cut into the flour:
- 2 sticks of real butter (not softened) until it looks like coarse cornmeal
- press: into a 13″ x 9″ x 2″ pan (do not butter pan)
- bake: for about 20″ or until lightly browned. Cool
- beat together until frothy (1-2 minutes or so):
- 4 large beaten eggs
- 2 cups granulated sugar
- 3 tbs. lemon juice – fresh
- 3 tbs. lime juice – fresh
- 1 tsp. grated lemon zest
- 1 tsp. grated lime zest
Set aside.
Mix 1/4 cup flour and 1 tsp. baking powder together and then add it to the egg mixture.
Pour this over the baked crust. Bake for 20-25 minutes until set. Cool. Sift powdered sugar over top and serve.
