Chicken Divan


A splurge for sure but okay on occasion! Of course, you can always change the rich ingredients to low fat ones if that makes you feel better.

Preheat the oven to 350 degrees

  • 2 pkgs. of frozen broccoli (or use fresh broccoli) frozen is fine!
  • 2 cans of cream of chicken soup
  • 1 can of cream of mushroom soup
  • 1 whole boiled Chicken (remove meat once cooked) or use the equivalent amount of plain chicken breasts boiled. (I like boiling a whole chicken on medium heat for about 60 minutes or about 45 minutes for the breasts because then I can use the broth for soup OR usually for my dogs. We use organic chicken which I also call Happy Chickens because of the way they are raised in a free open environment with freedom to roam and then are humanely slaughtered – not done in a corporate slaughter house like Tyson or Purdue.)
  • 1 cup mayonnaise – NOT salad dressing
  • 2 tablespoons lemon juice – or to taste
  • 2 tablespoon of curry powder – I add a dash more because I love curry.
  • 1 cup sharp cheddar cheese grated (you can use any cheese you like)
  • 1/2 o 1 cup of bread crumbs
  • Butter for the top ( I don’t use the butter because of all the cheese and soups) I sprinkle a little of the grated cheese on top.

Cook broccoli but don’t overcook since it will be cooking again in the oven! Drain. Arrange it on the bottom of a greased (or use Pam) 13X9 baking dish or a little bigger if you wish.

Mix all the other ingredients together, including the pieces of chicken, EXCEPT the bread crumbs and butter.

Pour ingredients over the broccoli and cover with the bread crumbs and dot with butter if you are using butter.

Bake at 350 for 30 minutes.

Serve over rice or not. A good salad and bread complete the meal.
